In 2005, they embraced the "Micromill Revolution" by acquiring their own depulper, enabling them to control processing and pricing, leading to the development of explosively flavorful profiles. Despite facing challenges like a major earthquake in 2008, they leveraged their expertise in African raised bed drying to perfect Natural Processing, as seen in microlots like the Black Diamond Gesha from Las Lajas, where an extended drying period of 15-22 days results in a unique appearance and a sweet, clean, and bright flavor reminiscent of black diamonds.
