Jorge Rojas, a fourth-generation coffee grower from Planadas, Tolima, Colombia, employs a meticulous fermentation and drying process for his Geisha coffee. Beginning with careful cherry selection, the cherries undergo a dual fermentation process in sealed tanks before being washed to remove mucilage. Following this, the coffee undergoes a precise drying regimen involving mechanical drying, storage in fique bags, greenhouse drying, and final mechanical drying before being cooled, stabilized, and packed for distribution.
