Apple Cider Vinegar is dehydrated by using maltodextrin, a flavorless, easily digestible and gluten free additive. The dried powder is a way to add tartness to dishes without adding liquid. This works particularly well with barbeque rubs and marinades that need that bit of acid and sourness but can also boost the flavor of beans and potatoes.
It is best to use the vinegar as a powder - rehydrating it will not yield the same product as liquid vinegar.
