The Ruffatti family, originating from Turin, Italy, has nurtured Finca El Salvador in El Salvador for five generations. Located atop Cerro El Aguila, it spans 1640 masl and is dedicated to specialty coffee production. Divided into halves, the lower portion features cupping hybrid varieties like Portillo and Tabi, known for disease resistance and fruitful cups, while the upper part cultivates exotic varieties like Geisha, Ethiopian, and others, creating a diverse and rich coffee landscape. The Borbonera 48N Lot is an outstanding coffee, sourced from Red Bourbon plants aged over 60 years. The short carbonic maceration process enriches its intricate and fruity flavours, delivering a gentle acidity, well-rounded sweetness, and beautiful balance.
